Slow Roasted Lamb

LAMB SIMPLICITY

(SERVES 2)

 

2 LARGE MEATY LAMB SHANKS (1PLUS LB EACH)

1-2 GARLIC CLOVES, MINCED

SEASONED SALT AND PEPPER

FLOUR

CRUSHED DRIED ROSEMARY

COOKING SPRAY

1 PACKET OF BEEF FLAVOR BOOST

SMALL AMOUNT OF TOMATO PASTE

 

RUB LAMB WITH THE FLAVOR BOOST, SALT, PEPPER, FLOUR, TOMATO PASTE AND ROSEMARY. PAT ON THE GARLIC AND SPRAY WITH COOKING SPRAY.

 

WRAP WELL EACH PREPARED SHANK INDIVIDUALLY IN HEAVY ALUMINUM FOIL, SEALING THE ENDS SO ALL JUICES ARE CONTAINED. PLACE IN BAKING DISH WITH FOIL FOLDS UP.

 

BAKE 2 ½ HOURS @ 325.

 

CORNSTARCH/WATER MIX TO THICKEN IF DESIRED

DASH OF KITCHEN BOUQUET FOR COLOR IF DESIRED

 

COOK THE GIZZARDS IN SALTED WATER FOR 1PLUS HOURS UNTIL SOFT AND TENDER.

DRAIN AND CUT INTO BITE-SIZED PIECES (RESERVE SOME OF THE BROTH).

FLOUR THE GIZZARDS AND SAUTE IN THE BUTTER WITH THE ONION, CELERY, PARSLEY, CARROT AND SEASONINGS UNTIL DESIRED DONENESS. ADD THE BOOST AND SOME COOKING BROTH; SIMMER FOR A BIT. YOU CAN THICKEN WITH THE CORNSTARCH/WATER MIX IF DESIRED.

 

SERVE OVER COOKED NOODLES OF CHOICE OR RICE.
